Covid increases the awareness of remote working luckily. As a graphic designer, I was spending so much time on the computer; this was causing me not having enough time for shopping or cooking. Eventually, I started to gain weight and eat junk food a lot. To stop this, I searched for an online food ordering service and decided to go with Gousto. I loved their branding and brand messaging, as well as their recipes. Since I’m Turkish and enjoy the Mediterranean diet, their recipes were the closest ones to my taste. To keep everything in my archive, I’m writing their recipes in here too for future reference.
Recipe for 2
INGREDIENTS
3 white potatoes
Olive oil
2 x 125g chicken breast fillets
½ tsp cayenne pepper
1 tsp dried oregano
Salt & pepper
1 spring onion
30ml mayonnaise
1 garlic clove
15ml white wine vinegar
Vegetable oil
2 ciabatta rolls
1 little gem lettuce
METHOD
Preheat the oven to 220°C/ 200°C (fan)/ 425°F/ Gas 7. Cut the potatoes (skins on) into bite-sized pieces
Add the chopped potatoes to a baking tray, drizzle with 1 tbsp olive oil and season with the dried oregano, salt and pepper. Put the tray in the oven for 25 min or until golden and crisp – these are your herby roast potatoes
Add the chicken breasts to a plate with the cayenne pepper (can’t handle the heat? Go easy!) and season generously with salt and pepper. Refrigerate until later
Trim, then slice the spring onion finely. Peel and finely chop (or grate) the garlic. Add the sliced spring onion to a small bowl with the mayo, chopped garlic (don’t like raw garlic? Go easy!), white wine vinegar, salt, pepper and a drizzle of olive oil – this is your garlic mayo
Meanwhile, heat a large, wide-based pan (preferably non-stick with a matching lid) with 1 tbsp vegetable oil over a medium-high heat. Once hot, add the seasoned chicken breasts and cook for 3 min on each side or until golden. Add a couple of splashes of water to the pan and cover with a lid. Cook for a further 12-15 min or until the chicken is cooked through (no pink meat!)
Add the ciabatta rolls to a separate baking tray and put the tray in the oven for 5 min or until they’re hot and crusty. Carefully slice them in half before serving
Wash and shred the little gem lettuce. Assemble your sandwiches with the cooked chicken, adollop of garlic mayo and shredded lettuce
Serve the herby potatoes to the side with the remaining shredded lettuce and drizzle over the remaining garlic mayo
